Sanguan Parr has been with the Lancaster for 16 years. She is from the Southern region of Thailand, an area famous for dishes prepared with chillies, limes and deliciously bitter flavours. Her menu also includes classics from the Northern region of Thailand that will be familiar to aficionados’ of this superb and healthy cuisine. It is this combination of eye-catching presentation and deliciously fresh ingredients that makes Thai food so unique. Recognition of Nipa’s dedication comes in the form of two AA rosettes and its selection for membership of the Thai Select programme (conferred by the Thai Government).
